German Potato Salad

We love this easy German potato salad because it is a nice change from the traditional mayonnaise potato salad! Warm German potato salad has the perfect amount of smokiness, acidity and tang. It makes a great side dish to bring either hot or cold to parties, potlucks or barbecues!

This potato salad is loaded with freshherbs to offset the heaviness of the bacon grease.

This mayo free authentic german potato salad is made with only the grease from the bacon, vinegar and whole grain mustard. No mayonnaise or eggs needed!

Ingredients

  • Baby potatoes: We used baby potatoes because they hold their shape really well and don’t get mushy. You also don’t have to worry about peeling the skin either! You can substitute mini yellow potatoes or dice whole potatoes into bite size pieces.
  • Bacon: Is essential to this dish. It give the dish so much flavor and acts as the dressing for the potatoes.
  • Onion & Garlic: Are sautéed in the bacon grease and give the potato salad so much flavor.
  • Vinegar: We love using red wine vinegar. However if you do not have that on hand feel free to substitute either apple cider vinegar or white wine vinegar.
  • Whole grain mustard: Give this warm german potato salad a nice kick. You can also use yellow mustard, dijon or spicy brown mustard.
  • Fresh herbs: We use fresh chopped parsley, chives, dill and thyme. If you don’t have fresh herbs on had substitute dried instead. Substitute 2 tsp dried parsley, 1 tsp dried chives, 1/4 tsp dried dill and 1/4 tsp dried thyme.

How to make German potato salad

  • Boil potatoes: Place potatoes in a large pot and add enough water to cover the potatoes. Bring to a boil and cook until the potatoes are tender, about 15 minutes or so.

  • Cook bacon: Meanwhile add bacon to a large skillet and cook until golden brown and crispy, 5-6 minutes. Remove the bacon from the pan and set aside. Leave the bacon grease in the pan.

  • Make the dressing: Add the onion to the bacon grease and cook until browned 2-3 minutes. Add in garlic and cook for an additional minute. Add in vinegar, mustard and return the potatoes back to the pan.

  • Serve: Sprinkle with the fresh herbs and serve warm!

  • Store: Leftovers in an airtight container in the refrigerator for up to 4 days.

Can this be served as a cold German potato salad?

Yes! I personally prefer this German style potato salad warm or heated up however it is still delicious cold out of the fridge. If you are serving this at a barbecue or potluck it can be left out at room temperature for no more than two hours.

Ingredients

  • 1 1/2 pounds baby potatoes, cut in half
  • 1 small red onion, diced
  • 6 slices bacon, diced
  • 2 cloves garlic, minced
  • 4 tbsp red wine vinegar
  • 1 tbsp whole grain mustard
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp fresh dill
  • 1 tsp fresh thyme

Instructions
