This is not your grandmother's corn bread. I found it many years ago and it has always had the best texture -- moist, sweet - melt-in-your-mouth good.

    • 1 cup cornmeal
    • 1 cup flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 egg
    • 1 cup milk
    • 1/4 cup oil
    • 1/4 cup honey

Ingredients

  • 1 cup cornmeal shopping list
  • 1 cup flour shopping list
  • 2 teaspoons baking powder shopping list
  • 1/2 teaspoon salt shopping list
  • 1 egg shopping list
  • 1 cup milk shopping list
  • 1/4 cup oil shopping list
  • 1/4 cup honey shopping list

How to make it

  • Preheat oven to 425 degrees F.
  • Sift dry ingredients.
  • Mix remaining ingredients, then add to dry ingredients. Beat until smooth.
  • Pour into greased and floured 8-inch square baking pan.
  • Bake for 20 minutes.
  • Serve with butters and jams. It's also excellent with spicy dishes.

    I just made this for tonight's turkey chilli and I of course had to do quality control tasting ;) It was delicious! I did have to turn the oven down half way through the baking process as I have a gas oven and the heat was a bit much. I also used 1/3 c honey instead of 1/4 for a touch more sweetness. Over all it was super easy and super delicious!

    Wonderful!!!!! Thank you for having all honey so I there was no need to figure out the substitutions to make an all honey cornbread. Very good general classic cornbread: light fluffy and rose well! We had it with black eyed peas and jasmine rice! We are feeling lucky! Thank you! :) HAPPY NEW YEAR!

    Cool! I've never had cornbread and usually the recipes I've seen are a little complicated for me :P This one is interesting with its twist of honey! Can't wait to try it!

    Yum..so good! I served this with Lilliancooks Easy Chicken Chili, and they were perfect together. I did drizzle some honey over the top of the batter before I baked as we like our cornbread pretty sweet and it was delicious! Thanks Edensong for a great cornbread! My IMI review Honey Corn Bread

    I hope you enjoyed it pointsevenout. No, there's no sugar -- the honey is the sweetener. That's what I love about this recipe! It also adds to the moistness.

    I’m no connoisseur of corn bread and I don’t have anything negative to say about this recipe. It bakes up as directed. Mother is the corn bread hound and noticed that there was no sugar in the product as is in the regular corn bread I make for her.

    I made this today. I thought the batter was a little on the soupy side, judging from the other cornbread recipes I have made. But the bread turned out a very light brown at 20 minutes. I added 5 more minutes for more coloration but removed it from the oven after 2 minutes extra.

    Will have to get back to you on the taste. I buried a couple of pieces under a multi-bean recipe to soak up the soup, which camoflaged the bread taste.

    I made this recipe tonight and served it with chili. The slight sweetness was a nice compliment to the spices in the chili. Here in Brazil, they are accustomed to a cornmeal cake, which is much sweeter than the cornbread, but everyone liked the cornbread. I like the fact that cornbread can be stirred up quickly in one bowl, and bakes in only 20 minutes. I made it while the chili was simmering.
