If you love cinnamon rollsand French toast, this is just the dish to make! In my family, this is made each and every Christmas morning. I prep it the night before along with my Biscuits and Gravy Breakfast Casserole and after all the presents have been opened on Christmas morning, this goes into the oven and is something each and every one of my family members look forward to!

Ingredients Needed for Cinnamon Roll French Toast Casserole

This easy recipe uses ingredients you may already have on hand. For exact ingredient measurements and step by step instructions, see printable recipe card below.

  • Butter- I use unsalted butter, any type works, melted
  • Cinnamon Rolls- my favorite are the Pillsbury cinnamon rolls, 8 count packages
  • Eggs-
  • Heavy Whipping Cream
  • Cinnamon
  • Vanilla Extract- make sure its pure versus imitation as pure adds way more flavor
  • Pecans- chopped, you can also use chopped walnuts if desired

Variations

  • Instead of the icing on top that the cinnamon rolls comes with, you can use cream cheese icing (canned).
  • Add some raisins into the casserole when you are coming the cinnamon roll pieces with egg mixture.
  • For added sweetness, drizzle 1/2 cup maple syrup over the casserole once baked and warm from the oven.

How to make Cinnamon Roll French Toast Casserole

  1. Pour melted butter into an ungreased 9×13 baking dish.
  2. Separate cans of dough into 16 rolls and set icing aside for later.
  3. Cut each roll intoquarters and add to buttered baking pan in a single layer.
  4. Beat eggs in medium bowl. Add cream, cinnamon, vanilla and beat until well mixed. Pour egg mixture over quartered pieces.
  5. Sprinkle with pecans and drizzle syrup on top.
  6. Bake at 375 for about 20-25 minutes, or until golden brown.
  7. Cool about 10 minutes.
  8. Microwave icing for about 10-15 seconds and drizzle over the top of the pan.

Slow Cooker Cinnamon Roll Casserole

Since I received many messages asking how to make this in the crockpot, I played around with it and came up with just the method. I will note, it won’t have the same texture since one is baked and other is slow cooked, however, both are great options!

  1. Follow recipe as written, however, place 1/2 the dough pieces into greased slow cooker.
  2. Pour half the egg mixture on top, repeating layers until no more cinnamon roll pieces and egg mixture are left.
  3. Cover slow cooker with lid and cook on low for about 4 hours. Keep on eye on it as all slow cookers cook differently and you may need to increase/decrease time.
  4. Once done, drizzle icing on top and serve!

Tips and Storage

  • If your casserole is getting too brown on top but not quite done baking, cover with a tin foil tent until cooked through.
  • You can also make this bake in two 8×8 baking pans.
  • If you don’t have heavy whipping cream on hand, you can use milk instead. Try to use a higher fat content milk if going that route though.
  • If you decide to prepare the night before, simply cover with plastic wrap and store in refrigerator. This casserole will actually last up to 3 days unbaked in the refrigerator.
  • Store leftovers in an airtight container in refrigerator up to 4 days.
  • Baked leftovers can be frozen in freezer container up to 3 months.
  • To reheat, place desired sized piece into microwave heating in 30 second increments until desired temperature is reached.

Can you make this in advance?

Absolutely! In fact, I recommend doing so to save on time. You can add the cinnamon roll pieces to the casserole dish and prepare the egg mixture adding it only when ready to bake. Or, you can combine casserole as written in recipe and store in fridge overnight. Either way works great, just depends on preference.

What can I use in place of the packaged cinnamon rolls?

You can use homemade cinnamon rolls if you don’t have access to packaged cinnamon rolls. Another option is to use biscuit pieces similar to Monkey Bread, however, if you decide to do this, I recommend increasing cinnamon and vanilla as the biscuit pieces aren’t as flavorful as the cinnamon rolls are.

What should I serve this Cinnamon French Toast Casserole with?

The great thing about this casserole is that it fits any occasion. It can be served as breakfast, snacks, brunch, or a dessert. When serving this, I always pair ours with my Biscuits and Gravy Breakfast Casserole, however, I know a lot of people serve fresh fruit with theirs. A flavorful quiche or Breakfast Sliders are a great option as well!

Why is my French Toast Casserole Soggy?

I noticed this each time I didn’t let the casserole fully cook in oven. If you notice this once cutting a piece, simply place it back into the oven for additional time.
